Downstairs off Rundle Street, Hellbound is a wine bar that appears forged from a cellar.

You can get your hands on an impressive range of wines by the bottle and taste your way through the terroir of the world's best regions. These belters are shoulder-to-shoulder with the best of local, small batch and natural wines, so expect no snobbery, only a well-rounded curation.

By the glass, you can still make your way from Burgundy to Spain and back to McLaren Vale within the hour, tasting the fruit of local vineyards against that of 200-year-old domaines.

The snacks list features some punchy numbers, with enough brawn to accompany your booze — such as cacio e pepe crisps ($9) and anchovies with crostini ($12) — and provides some longevity to what has the potential to be a boundless tasting experience.

If wine is not your thing, you can find a few classic cocktails, like a martini and a negroni, alongside a neat selection of beer, cider and snakebites on the menu.

The wine list is ever-changing and easy to digest, with unpretentious notes aimed at creating an accessible journey for all their guests.
